Acorn Squash Sweet Bread with Coconut Maple Drizzle

Ingredients

1 cup acorn squash puree (about 1 small squash, roasted and blended)

1/2 cup maple syrup

2 large eggs

1 teaspoon vanilla extract

1/2 cup nonfat Greek yogurt (optional but recommended for extra moisture)

1 1/2 cups soft winter wheat flour (freshly ground)

2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg (optional)1/2 cup chopped walnuts

Coconut Maple Drizzle

2 tablespoons coconut oil, melted

1 tablespoon maple syrup

Instructions

1. Prepare the Squash: Preheat your oven to 350°F (175°C). Cut the acorn squash in half, remove seeds, and roast cut side down on a baking sheet for about 25-30 minutes, or until soft. Scoop out the flesh.

2. Purée in Vitamix: Place the roasted squash flesh in the Vitamix and blend until smooth. Add a small splash of water only if necessary for blending but keep it minimal to maintain the right consistency for the bread.

3. Mix Wet Ingredients: In a large bowl, combine the acorn squash purée, maple syrup, eggs, vanilla extract, and Greek yogurt. Whisk until smooth and well combined.

4. Combine Dry Ingredients: In a separate bowl, mix the wheat flour, baking powder, salt, cinnamon, and nutmeg if using.

5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Avoid overmixing to keep the bread soft. Fold in the chopped walnuts.

6. Bake: Pour the batter into a greased or lined loaf pan, smoothing the top. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool and Drizzle: Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

8. Prepare and Apply Coconut Maple Drizzle: For a firmer drizzle, combine the melted coconut oil and maple syrup. Once the bread is completely cooled, drizzle the mixture over the top. Allow it to sit for a few minutes to firm up as the coconut oil solidifies.
