Ingredients:

  • 1 cup pearl barley

  • 2 cups vegetable broth

  • 1 cup water

  • 1 large onion, diced

  • 1 red bell pepper, diced

  • 2 cups cooked chickpeas (or one 15-oz can, drained and rinsed)

  • 1 cup frozen peas

  • 1 cup corn (fresh or frozen)

  • 2 cans (14 oz each) diced tomatoes with juice

  • 1 can (6 oz) tomato paste

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon smoked paprika

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • Optional: 1 block (about 14 oz) of firm tofu, diced

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Barley:

    • Rinse the barley under cold water.

    • In a large pot, combine the barley, vegetable broth, and water. Bring to a boil.

    • Reduce the heat to a simmer, cover, and cook for about 45 minutes, or until the barley is tender.
